Recipe of the Week

Each week we’ll bring you a tasty recipe passed down by Emanuel families, from the Emanuel School Community Cookbook, The Family Meal. 

From the Kitchen of Sally and Lisa Greenberg 

Nana Judy’s Pavlova  

Ingredients 

400ml cream
Fresh fruit
6 egg whites
2 cups sugar
1 1/2 tsp white vinegar
1 1/2 tsp vanilla essence 

Directions  

Pre heat oven to 2000C.
Beat egg whites.
Slowly add the sugar, a little at a time.
When stiff, add vinegar and vanilla essence.
Put foil on a tray.
Mould egg white on the foil into the shape you want.
Put in the hot oven then lower the temperature to 1600C.
Leave for approximately 50 minutes and then let cool in the oven, leaving the oven door slightly ajar.
Smother with whipped cream and fresh fruit.
