From the kitchen of the Carpenter Family
Easy Peach Pudding
Ingredients
For Base:
8 peaches, halved
4 tbsp caster sugar
4 tbsp water
1/2 teaspoon vanilla essence
For Topping:
125g butter softened
125g sugar
125g self-raising flour
2 eggs
Directions
Preheat oven to 1800C.
For the base, bring all ingredients to a boil in a pan and simmer for 5 minutes.
For the topping, beat the butter and sugar together until creamy.
Add the eggs one at a time and combine.
Add self-raising flour.
To combine, grease a baking dish with butter and shake in some sugar.
Place the peaches and syrup into the dish. Put pudding topping on in dollops.
Bake for 30 minutes.
Serve with vanilla ice-cream.
