Each week we’ll bring you a tasty recipe passed down by Emanuel families, from the Emanuel School Community Cookbook, The Family Meal.
From the kitchen of Jemma and Cooper Adler
Zucchini kugel
Ingredients
6 eggs
6 zucchinis, grated
1 large onion, grated
1/2 cup vegetable oil
2 tsp salt
1/2 tsp ground black pepper
1 cup self-raising flour
Directions
Preheat the oven to 1800C.
In a bowl, combine the eggs with the grated zucchini and onion.
Add the remaining ingredients and mix well.
Line a baking dish with baking paper and pour the mixture into the dish (you can also bake these as muffins).
Bake uncovered for 45-55 minutes (or 35-45 minutes for muffins).
Serve hot
