Five C’s Salad
Ingredients
12 carrots, grated
1/2 cup desiccated coconut
4 tbsp mayonnaise
1/2 tsp curry powder, or more if you like a stronger flavour
1/2 cup currants
1/2 cup roasted cashews
Directions
Mix carrots, coconut and currants in a salad bowl.
Mix curry powder with mayonnaise and stir through salad.
Sprinkle cashews on top just before serving.
Serves 4-6
