From the kitchen of the Esra Family
Sweet Potato and Red Lentil Soup
Ingredients
2 tbsp olive oil
1 onion, chopped
1 clove of garlic, crushed (optional)
500g sweet potato, cubed
1/2 cup red lentils, washed
1 potato, cubed
3 1/2 cups vegetable stock
Directions
Sauté onion and garlic in olive oil until soft.
Add sweet potato, potato, red lentils and vegetable stock and cook until soft (approximately 20 minutes).
Puree mixture
Serves 4
