FRESS with Ms Lowe
Charred broccolini, red onion and chickpeas
Ingredients
1 small red onion cut into wedges
1 bunch broccolini
400g can chickpeas, drained and rinsed
1 tsp smoked paprika
1 large garlic clove, crushed
2 tsp lemon zest
2 tbs lemon juice
1 tsp Dijon mustard
½ tsp pepper
¼ cup chopped parsley
Directions
In a frying pan over medium high heat, char red onion and broccolini. Place on a serving plate. In the same pan, brown chickpeas with smoked paprika and garlic. Add to the onion and broccolini. Combine lemon zest, lemon juice, mustard, pepper and fresh parsley. Pour over vegetables. Serve with lemon wedges.
